Recipe of 'Banana kababs in curd' from 'Robson All India Bar And Restaurant'

12 Bananas( raw)
salt, lal mirch powder and hari mirch ( finely chopped)to taste
2 tble sp bread crumps, arrowroot or corn flour
125 gm ghee or vegetable oil
250 gm curd
1 inch piece of ginger
1 tsp sonf (roasted and powdered)
1 tsp zeera( roasted and powdered0
a pinch of hing(roasted and powdered)
2 tsp dhania powder

Boil the bananas in their skins. Peel mash and mix in salt, hari mirch and ginger. Mash again

Add cornflour or breadcrumbs and mix thoroughly. Make into half-inch thick , oval kababs. Deep fry and set aside. When this is done, arrange the kababs. Deep fry and set aside.When this is done arrange the kababs in a plate and cover with cold, whippered curd. Sprinkle with a mixed spice made of sonf, zeera, roasted hing and dhania.Serve immediately.
